The start of the White Truffle Season in Piedmont already started. White truffle season is from September to December when they grow wild in the forests around Alba. The white truffles grow deep in the forests of the Langhe. Each is individually sniffed out by a professional trained dog.
Truffles are mushrooms. They grow under trees, on their roots, from which they gain nutrition. Truffles have different characteristics, depending on their typology (white or black) and variety.
The most prized for its earthy scent is the yellow Alba, or the white truffle. Locally well known as ‘grey diamonds’. In restaurants around Alba (and Mango!), the white truffle is now the top of the menu and served alongside a fine glass of Barbera. Enjoy the paper-thin slices truffle over a variety of dishes, from buttered tajarin (pasta) to eggs and carne cruda.
For a simple buttered pasta with slices of white truffle you pay three times the menu. But believe us, it’s worth the money because it’s taste is absolutely DIVINE!
